clean eating stuffed zucchini

Ingredients
7 small zucchini1/2 cup liquid egg whites1/2 cup organic tomato sauce1 tbsp italian season (basil, oregano, garlic)1 tsp thyme1 cup TVP (Texturized Vegetable Protein)
Directions
clean and cut the zucchini lengthwise in half
scooop out the insides into a bowl.
preheat oven to 350
line a cookie sheet with parchment paper and set the zucchini halves on the cookie sheet
add the egg whites, the tomato sauce and the seasonings and mix them well with the zucchini insides
add the TVP and mix well again.
using a spoon, scoop the mixture back into the zucchini halves.
get ALL the mixture back in - stuff well

bake about 20-30 minutes

DONE!
