Strawberry Vanilla Bread

1/4 cup vegetable oil3/4 cup unsweetened applesauce1/3 cup granulated sugar2 (3 1/2 ounce) packages instant fat-free, sugar-free vanilla pudding mix2 eggs10 oz low-fat silken tofu, pureed2 1/2 cups flour2 cups whole-wheat flour1/2 tablespoon baking soda1 1/2 tablespoons baking powder4 cups frozen strawberries, thawed (reserve 3/4 cup juice)
Preheat oven to 350F, grease 2 loaf pans.
Combine sugar, oil, applesauce and vanilla pudding mix.
Add eggs and tofu puree, blending well.
Combine dry ingredients, and add gradually on low speed, mixing thoroughly.
Add strawberries and reserved juice; mix well.
Bake 60 minutes, turn out immediately and cool on wire racks.
