Ackee and salfish

Ingredients
small tin of ackee1/4 lb saltfishsmall sweet peppermeduim onoinblack pepperescallionvegetable oil
Directions
.dice medium onion,sweet pepper and escallion.
Boil saltfish,then place in cold water and ter into pieces.
heat pot and add a tsp of vegetable oil
strain ackee and saltfish and place in pot along with onion and escallion and pepper to your desire.
stir cover pot and let simmer for 2-3mins.

    great dish for sure...but re-do the caloric and nutritionalvalues because although ackee may not carry too many calories at all, q quarter of a pound of cod/salted fish carries more than 19 calories. even a whole onion has more than 19 calories. But great photo and great recipe - 1/30/11
