Lemon Scallop Salad

Ingredients
12 oz scallops1 tsp olive oil1/2 cup lemon juiceSalad fixings of your choice
Directions
heat a medium frying pan to med-high heat. Add olive oil, wait until it is hot. Add scallops and quickly sear. Add lemon juice and cook scallops through. Remove scallops and reduce pan sauce until it coats the back of a spoon. Add scallops back in and toss. Divide over two plates of salad and serve.
