Milk Tart

Pastry Ingredients:1 1/2 cups flour1 1/2 tsp baking powder125g low fat Marg1/4 tsp salt1 small egga little milk for binding (if needed)3 tbsp Castor sugarFilling4 Cups 2% milk1 tbsp flour2 tbsp cornflour4 tbsp Sugar2 bayleaves4 Med eggs (seperated)
Pastry;
in a bowl sift the flour, baking powder and add the sugar and marg rub with fingers until it looks like bread crumbs. Beat and add the egg and mix into a dough if dry add a little milk. knead it until all mixed well. roll out and fit it into 8" tart or pie tins.
Should make 3.
Heat oven to 180 Degree C Place the tart bases in the oven for a few mins until you can see them turn white and rise a little.
Filling:
Place the milk onto boil except for 1/4 cup. In the milk on the boil add the sugar and bay leaves bring to the boil. whilst that is on the stove in a bowl mix flour and cornflour together to make a past with the milk reserved. any extra can be added to the milk on the boil. beat the egg yolks and add to the flour mixture. when it has come up to the boil slowly pour into the bowl with flour stirring continuously once all milk is mixed with the flour and egg return it to the saucepan and put back on to cook. STIRRING continuously or else lumps will form bring up to the boil. once had started boiling turn the stove down and simmer for 3 Mins. Remove from heat and allow to cook a little. Beat the egg whites until stiff and fold into the milk mixture. Pour into your pre cooked base and sprinkle a little cinnamon powder over the top. Bake in oven at 180 degrees C for approx 20min or until the have risen and are very lightly browned. Remove and allow to cool.
Each pie tin makes 4 slices depending on your calorie diet you can reduce the size of the slice but i have put down that 1 serving is 1slice sorry I don't know the actual sizes.
