No Potato Salad

Ingredients
I package frozen cauliflower, cooked3 celery stalks, diced4 T dill pickle relish1 T dried parsleygreen onions, diced - or - 2 T dried minced onion3 hard boiled eggs, diced4 T mayonaisesalt and pepper to taste
Directions
Lightly cook frozen cauliflower (do not overcook or it will develop a strong cauliflower taste) and refredgerate until cold. Use a salad spinner to remove all excess water and then mix in remaining ingredients.

Serving Size: Makes about 4 (1-cup) servings
