12 Cloves Garlic2 Cans Corn2 TB Butter1 Medium Onion2 Red Peppers4 c Chicken Stock4.5 c CouscousCilantro, as desiredGreen onions, as desiredSalt Pepper
Wrap peeled garlic cloves in foil and bake for 20 minutes at 400 F. In large pan, melt butter. Add onions and cook til soft. Add red peppers, cooking about 2 minutes. Finely chop garlic. Add to onions and peppers. Pour in chicken stock and bring to a boil. Add couscous and remove from stove. Fluff with a fork after 5 minutes. Add cilantro, green onions, salt and pepper as desired.
