Ginger Beef

Ingredients
A bit less than 2.5 lb beef, cut into bite-size pieces(I used two of the little-more-than-1-lb packages of cut beef pieces from the grocery store)A large chunk of ginger - about 6" - peeled and cut into matchsticksOne leek, slicedAbout 1/4 c Canola Oil for cookingSoy sauce to taste (I didn't measure, but I think I used about 3 tbsp)
Directions
Slice all ingredients and place in a large skillet or wok. Cook on medium heat until the meat is done and the leeks are soft-ish (a bit of crunch left in the leeks is good). Enjoy over rice or by itself.
