Black Forest Mushroom Soup

2 lbs mushrooms - mixture cremini, baby bellas, shittake, button sliced 1/4" thick 2 cloves garlic2 tsp. herbs de province2 Leeks cleaned, sliced 1/2'' thick5 cups carrot juice3 cups water2 carrots chopped3 cups cauliflower broken small1/4 c. raw cashews1 T. lemon juice2 tsp fresh thyme1tsp fresh rosemary2 cans white beans (navy, cannolini etc)5oz bag spinach1/4 c. parsley
saute mushrooms in 1/8 cup water till fragrant & soft
In separate pan bring carrot juice and water to boil with carrots, leeks, and cauliflower. Simmer 30 min. or till tender.
Place 1/2 of carrot veggie mix in blender with cashews, lemon juice, rosemary, and thyme. Blend till creamy.
Mix mushroom mixture, veggie soup, blended veggies, beans, spinach, parsley. Cook till spinah wilts. Serve
