Light Asian Chicken Soup

Ingredients
1 6.75 oz Bag Maifun Rice Sticks soaked8 c. Chicken broth1 c. Chopped Celery1 c. Chopped Onion1 leek, cleaned, sliced with greens3 cloves garlic finely chopped3 Tbl Ginger, sliced & pounded1 Tbl Sesame oil (or more to taste)1 Tbl Rice wine vinegar.
Directions
Soak noodles in warm water till softened.
Saute Celery, onion, leek, garlic & ginger in 1 tsp oil
Add diced chicken & broth.
Simmer for 20 minutes
Add Sesame oil, Rice wine vinegar & rice sticks. Bring back to a boil briefly.
Serve.
