Easy Tomato Couscous Chicken

Ingredients
Directions
1 can (14.5 oz) Diced Tomatoes- No Salt Added- NOT DRAINED1 cup uncooked Couscous1 lb. boneless skinless chicken breast/cutlet
Preheat oven to 375 degrees
Place uncooked couscous in an 8x8 baking dish
Top with Chicken
Pour Tomatoes- UNDRAINED on top
Cover Dish with Aluminum Foil and check for done-ness after about 30 minutes.
The chicken comes out incredibly moist because of the liquid from the tomatoes.
I like to spice it up by mixing in some rotel!

sorry but I think this was submitted as a joke... the chicken should be seared first or it will not be even vaguely cooked for at least 90 min that is. Plus the couscous does not absorb the juice underneath the chicken. And the tomato is tasteless. Advise strongly against using this recipe. - 5/30/11
