Dinner Party Pepper Steak Stir Fry

Marinade: 3 cup coffee1/2 cup soy sauce1 Tbsp grated ginger root or 1.5 tsp organic ginger juice 1 lg clove garlic, grated1 tsp toasted sesame oil2.5 lb beef, top round steak2 lg red bell peppers, sliced in 2" pcs - approx. 4 cups4 lg yellow onions, sliced in 2" pcs - approx. 4 cups1 fresh broccoli crown, cut in 2" pcs.1 can sliced water chestnuts2 cans sliced mushrooms4 Tbsp canola oil, divided
Prepare marinade and pour into zipper bag. Thinly slice top round steak, trimming any fat, add to marinade. Marinate 2 -3 hours. Reserve 3 cups marinade.
Prepare rice per package directions.
Using Wok or large non-stick frying pan, Stir fry fresh vegetables in 4 small batches in 1 Tbsp oil (each batch). Set aside.
Stir fry beef in small batches, set aside.
Add corn starch to marinade, cook in wok until thickened. Add stir fry vegetables, mushrooms, water chestnuts and beef. Toss to coat in sauce and heat through. Serve over rice.
Serving Size: Makes 8 servings stir-fry; 8 - 1/2 cup servings rice
