Spinach, turkey bacon and cheddar quiche

Ingredients
Crust1 1/3 cup flour1/4 tsp salt1/2 cup butter or margarine, cut into small cubes2-3 tablespoon very cold milkFilling1/4 tsp dried thyme 1/2 tsp pepper8 slices turkey bacon, cooked1/3 - 1/2 cup spinach (if frozen, thaw first)1 cup cheddar cheese, low fat1/3 cup light sour cream1 1/4 cup 1% milk3 eggs 2 egg whites
Directions
To make crust:
In mixing bowl, mix together flour and salt. Cut in cold butter with pastry blender until coarse crumbs form; add cold milk a little at a time. (E.g. Add 1 tablespoon, then use pastry blender to mix, then add 2nd tblsp and mix, etc...) Once dough holds together and forms into a ball, shape into a disk, wrap in plastic wrap, and refrigerate for about 1/2 hour.
Take chilled dough out of fridge, and roll out into a circle about 11 inches in diameter. Fit dough into 9 inch pie plate, leaving some overhang, about 1/4 inch all around the edge. Prick dough with fork, line with foil and fill with dried beans or pie weights. Bake crust for 10-12 minutes at 375.

Filling:
In small bowl, whisk together eggs, egg whites, milk, thyme, pepper, spinach and sour cream. Pour intomthe baked crust. Crumble turkey bacon and cheddar cheese on top. Bake at 375 for about 30 minutes or until quiche filling is set and the top is slightly browned.
