sweet potata omelette

Ingredients
Lge sweet potato cut in 5 mm slicesYellow pepper thinly sliced2 cloves garlic crushed2 tbsp coriander1 tbsp dried parsley20 g cooked chicken breast in bite size chunks6 free range eggs beaten
Directions
Boil sweet potato for 5 minutes, meanwhile fry chicken, garlic and pepper over low heat until soft. spread sweet potato slices over base of pan and then add eggs with herbs and fry over low heat for about 10 minutes. Finish off under a hot grill until browned.
