Breakfast Granola

Ingredients
8 cups Old Fashioned Oats½ cup, plus 1 TBSP light tasting Olive Oil1 TBSP Vanilla extract½ cup, plus 1 TBSP honey½ cup each: almonds, pecans and walnuts½ cup each of dried fruit: raisins, craisins, cherries, etc…(Nutrition calculated using 3/4 cup almonds and 3/4 cup pecans; and 1/2 cup each of craisins; dried cherries and dried blueberries)
Directions
1. Combine oats, oil, vanilla and honey.
2. Spread in single layer on two jelly roll baking sheets
3. Bake 30 minutes total, turning and stirring after every 10 minutes.
4. Add nuts after the first 10 minutes.
5. Remove from oven and cool.
6. Stir in dried fruit.
7. Store in airtight containers. Freezes very well.
