Honey Chicken Kabobs

8 four- ounce skinless, boneless chicken breast: cut into 1- inch cubes1/4 cup canola oil1/3 cup low sodium soy sauce1/3 cup honey2 cloves garlic, minced1/4 tespoon black pepper5 small onions, cut into 2-inch pieces2 red bell peppers, cut into 2 -inch pieces
1. Whisk together oil, honey, soy sauce, pepper, and garlic. Before adding chicken, reserve a small amount of marinade to brush onto kabobs while cooking. Add chicken , onions, and peppers and marinate for 2 or more hours (the longer the better).
2. Soak 10 - 12 wooden skewers for 30 minutes or more. Drain chicken mix and divide chicken and vegetables evenly among skewers.
3. Cook the skewers on the grill, turning and brushing with reserved marinade for about 12 - 15 minutes or until the chicken is fully cooked (this can also be done in the broiler).
Makes 8 servings
Note: You can try a variety of vegetables. Some of my family's favorites are mushrooms, yellow squah, and zucchini.
