No Chicken Noodle Soup

Ingredients
Directions
3 tbs olive oil4 cloves garlic, minced1/2 large onion, chopped2 celery stalks, sliced3 carrots, sliced2 cups potatoes chopped4-6oz. Egg white noodles1 container Imagine No Chicken Broth* salt, pepper chili powder, curry seasoning to taste*
Sautee garlic & onion in 2tbs olive oil 2-5mins in a large pot.
In a separate pot boil water for egg noodles.
Add carrots, celery & potatoes to large pot.
Add egg noodles to boiling water, boil until al dente. strain noodles and return to noodle pot with remaining 1 tb of olive oil to prevent clumping.
Add entire container of broth to soup pot, season as desired.
Bring soup pot to boil, then reduce and simmer cover for 45 minutes.
Add egg noodles to soup before serving.
