-2 oz whole wheat noodles, uncooked-3/4 C low-fat ricotta cheese-1 C chopped zucchini-1 C chopped mushrooms-1/2 C fresh herbs: chives, basil, parsley
Cook noodles, drain & return to pot. Add ricotta cheese, zucchini, mushrooms and herbs. Mix together and cook for 5 to 7 minutes.
