1 cup yellow corn meal2 cups water3 tbsp butter3 eggs1 tsp salt1 cup milk (you can use skim)
boil water and salt and slowly add corn meal stirring constantly until mixtue is thick (like cream of wheat). Add butter and stir until butter is fully melted and incorporated. Let cool slightly. Beat eggs and milk together in a large bowl and slowly add corn meal mixture. The batter will be lose and slightly lumpy. pour into a greased souffle or cassarole dish and bake for 30-40 minutes until golden brown on top. Serve hot as a side with any meal. This stores and reheats well.
