1 cup Coconut Sugar1/2 Cup Margarin Becel3/4 Cup Pumpkin Puree1 tsp Vanilla Extract1 Cup Quinoa Flour1 tsp Cinnamon, ground1 tbsp Pumpkin Pie spice1/2 tsp Ginger, ground1/2 tsp Salt1 tbsp Cornstarch1/2 tsp Baking Powder 3/4 Cup Hershey's Special Dark Chocolate Chips
Preheat oven to 350 degrees.
Combine margarin, sugar, pumpkin and vanilla in a mixing bowl. Us an electric mixer and incorporate the ingredients well. Add the flour, baking powder, soda, cornstarch, salt and spices. Mix well. Add chips and mix until just combined.
Pour batter into an 8x8 inch pan that has been greased lightly.
Bake for 25 - 39 minutes until cooked through. Use a toothpick to test for doneness.
