Orange-Ginger Tofu

- 1 12 oz package extra firm tofu- 1/2 cup Iron Chef Orange Sauce Glaze with Ginger- 1 garlic clove, minced- pinch of salt- around 1 tbsp olive oil for frying
1. Place drained tofu on a plate. Place another plate on top of tofu. Place weight on top of plate (I use 2 cans of whatevers in the cupboard) to squeeze out excess water. Let sit for around 20 minutes.
2. Pour 1/2 cup Orange Sauce Glaze onto a large plate. Add minced garlic and salt and mix together.
3. Cut tofu into strips/cubes/pieces as desired.
4. Roll tofu pieces around in the sauce until all sides are lightly covered.
5. Warm up olive oil in pan. Fry marinated tofu until all sides begin to golden, about 10-15 minutes.
Serve with brown rice or mixed veggies. Tastes good alone too.
****The longer you marinate the tofu the richer the taste will be.
