zucchini, carrot & walnut mini muffins

Ingredients
3 eggs6oz greek yogurt (fat free) i use vanilla greek yogurt1 cup sugar1/3 cup brown sugar1 cup shredded zucchini1 cup shredded carrots3 cups whole wheat flour1 tsp baking soda1/4 tsp baking powder3 tsp cinnamon1 tsp salt1/2 cup chopped walnuts
Directions
1.) preheat even to 350. spray/line muffin pan

2.) beat eggs until light and foamy, about 3 min.

3.) add sugars, yogurt/oil and zucchini&carrots. don't dry veggies.

4.) add all dry ingredients,continue to combine with spatula until completely incorporated.

5.) bake for 11-12 mins depending on your oven.
