Stuffed Zucchini

4 Zucchini1 can Butter Beans1/2 Pint Grape Tomatoes, halved1/4cup Kalamata Olives, chopped1/4 cup green onions, chopped4oz Goat Cheesehandful of fresh basil1 tbs olive oil1tbs capers
Preheat oven to 400 fahrenheit
Slice Zucchini in half lengthwise and scoop out seeds to make boats. Brush with olive oil.
Puree basil and olive oil to make pesto.
Combine Pesto, Tomatoes, Olives, Onions, Cheese, Beans, Capers.
Place zucchini on cookie sheet and fill with mixture.
Bake until gooey and yummy!
