Broccoli, Mushroom Quiche

Egg, fresh, 4 large So Nice unsweetened soy beverage, 1.5 cup Mushrooms, fresh, 4 medium Broccoli, fresh, 1 cup, chopped *Cheese (Kraft Light Parmesan), 4 tbsp Salt, 1 dash Pepper, black, 1 dash *1 cup onion chopped, .5 serving Pie crust, frozen, ready-to-bake, 1 crust, single 9"
Preheat oven to 375 degrees
Saute chopped mushrooms, broccoli and onions in olive oil until soft. Place in pie crust.
Scald milk, cool slightly and add beaten eggs, salt and pepper.
Sprinkle Parmesan over sauteed vegetables, add herbs as desired.
Pour milk egg mixture until pie crust and bake until knife inserted in centre comes out clean.
Serving Size: makes 4 generous servings
