Stuffed Mushrooms

Ingredients
12 Large Button Mushrooms4oz Reduced Fat Cream Cheese1/4 Cup Parmesan Cheese1/4 Cup Mayo- reduce fat or no-fat is fine1/4 Cup Breadcrumbs- I am partial to Ian's Panko Breadcrumbs- Italian Style1/4 Cup ScallionsNo Sodium seasoning or salt and spices of your choice
Directions
Makes 6 Servings- 2 mushrooms each

Preheat oven to 325 deg

Brush off or wash mushrooms- remove stalks

Combine cream cheese, mayo, Parmesan cheese, breadcrumbs, scallions, and spices

Put a heaping spoonful of mixture in each mushroom, place mushroom in baking dish

Bake for 18-20 minutes or until mixture is starting to brown and mushrooms are starting to release juice

Serve immediately
