Cheesey Sweet Potatoes

Ingredients
4 Large Sweet Potatoes1/3 Cup Low Fat Cottage Cheese1/3 Cup Park Skim Ricotta Cheese1/3 Cup Parmesan Cheese1 Tbsp Paprika1 Tsp White Pepper1 Tsp Black Pepper4 Tbsp Scallions
Directions
Wash the sweet potatoes well and place in a 400 degree oven for one hour.

Cut the potatoes length-wise and place in a baking pan or sheet.

Scoop most the the meat of the potato out into a large bowl and leave the skins intact.

Combine potato with the three cheeses and spices- mix well.

spoon back into potato skins, top with scallions and a sprinkle of paprika.

Bake in 400 degree oven for about 15 minutes or until potatoes are hot and browned.
