Baked Mint Curry Tilapia Fillets

Ingredients
6 100g (3.5 oz) Tilapia fillets1 C. light coconut milk1 t. mint leaves, diced & crushed 1 T. salt-free yellow curry spice mix1 t. sea salt1 t. powdered ginger2 garlic cloves, diced & crushed1 t. parsley flakes3 packets of Splenda1 T. lime juice (about 4 wedges, squeezed)
Directions
Lay thawed fish filets in the bottom of a baking dish.
Mix light coconut milk and other ingredients in a bowl and pour over the fish.
Bake at 425 for 20 minutes.
