Creamy Lentil Soup - Vegan/Paleo Diet/Hypo-Allergenic

1.5 cups lentils (or 4.5 cups cooked), any color4 cloves garlic, minced1 medium onion, chopped1 extra large carrot (or 2 medium), chopped2 tbs. cumin2.5 Tb. sesame, sunflower, coconut or olive oil6 Tbs. chopped green onions or chives.
Heat pan with oil. Add chopped vegetables, except the green onions and salt to taste. Once onions are translucent, add cumin (retain some) and stir for another minute or so. Then add lentils and water or vegetable stock and lentils (if you are not vegan/vegetarian, you can add organic, free range meat stock). Cook for 25-60 minutes (green lentils take longer, red lentils shorter). Add more green onions, remaining cumin and salt to taste.
Remove half the soup and blend in a blender, with a handstick or in a food processor. Return to pot. Enjoy sprinkled with green onion leaves and sea salt.
