salsa slow cooker chicken

Ingredients
4 boneless chicken breastscan black beans rinced and drained4 cups salsa of choice2 cups frozen corn1 sliced green pepper1 sliced red pepper1 packet taco seasoningChoice of:RiceTortillaBed of lettuce
Directions
Place thawed chicken on bottom of crock pot. Combine rest of ingredients over top.

After cooking on low for 8 hours or high for 5, remove chicken and slice into strips. Place chicken back into cooker and stir. This is awesome in a tortilla, over rice, or over a bed of greens as a "taco" salad. I love adding a sprinkle of a few TBS of cheese, and a dallop of low fat sour cream. Even some baked tortilla chips on the salad version is wonderful and low calorie!

I love making this the first night over rice. Then left overs of rice and salsa chicken rolled into a tortilla for lunch.
