1 large sweet potato1 oz goat cheese1/4 cup cottage cheese2 Tbsp low fat ricotta cheesesalt and pepper1 green onion slicedpaprika
Preheat oven to 400F. Scrub potato and prick with fork. Microwave for 6 minutes. Cut potato lenght wise and scoop out flesh.
Mash potatoes with cheeses salt andpepper, return to skins and top with green onion adnpaprika.
Bake for 15 minutes
