"Brunch Never Tasted So Good" Bread

1 cup wheat flour1 cup oat flour2 tsp baking powder1/4 tsp salt4 eggs1 1/2 cups Splenda2 tsp coconut extract1 tsp vanilla extract2 Tbsp sugar-free orange marmalade1 cup smoothie or fruit juice (no sugar added)3/4 cup raisins
Preheat oven to 375 degrees F.
Grease and flour a 13 x 9 pan.
In a medium bowl, mix together the first 4 ingredients - both flours, baking powder, and salt - and set aside.
In a mixing bowl, beat eggs until fluffy. Add Splenda and mix until creamy. Slowly add each remaining ingredient, stopping before adding raisins. Slowly add the dry mixture bit by bit until completely mixed. Add raisins and blend thoroughly.
Pour mixture into pan and place into preheated oven.
Bake for 20-25 minutes (check to maintain moisture). Toothpick test works great!
Set out to cool for 10 minutes - this bread will crumble easily if cut too soon.
