Breakfast Egg Bake

Ingredients
8 large eggs15 oz frozen shredded potatos1.5 cup fresh mushroom-sliced1.5 cup fresh tomatos-chopped1 cup green onion-chopped9 slices cooked ham lunchmeat -cut into one inch squares6 slices 2% american cheese singles1 tsp butter or margarine
Directions
Preheat oven to 350 degrees. Sautee mushrooms first in 1 tsp butter or margarine. Mix all ingredients together in a large bowl. Spray casserole dish with no- stick spray. Pour 1/2 mixture into a large casserole dish( 9x 13). Lay cheese slices over the top of first half. Pour remaining mixture over top of cheese. Bake for 45-50 min. ( test w/ knife or toothpic.) Cut into 8 squares and devour!!
