Vegetable Lentil Soup

Ingredients
2 cups lentils2 slices bacon (diced)1/2 c. chopped onion1 c. diced celery (diced)3 medium carrots (diced)2 T. dried parsley1 clove minced garlic2-1/2 t. salt1/4 t. pepper1/2 t. oregano2 c. chopped tomatoes2 T. red wine vinegar8 c. water (or chicken broth)
Directions
render bacon in a stockpot and then saute vegetables until translucent. Add water, lentils, tomatoes and seasonings and simmer for 30 minutes
