Honey Baked Lentils

Ingredients
1 cup lentils 2 cups water2 tbsp honey (or maple syrup, agave nectar, etc)2 tbsp soy sauce (or Bragg's, tamari, shoyu, etc)2 tbsp olive oil1/2 tsp ginger root, grated1 clove garlic, minced1 small onion, choppedsalt & pepper
Directions
Combine all ingredients in a covered dish. Bake in a covered dish at 350 until tender (about an hour and a half).

Alternatively, you can cook this on the stovetop for about 40 minutes in a saucepan (until the lentils are tender).

This is great served over rice, quinoa or couscous.

You can also use red lentils, which has more of a soup-like consistency. Equally delicious. Experiment!

    Excellent recipe.
    I have done this recipe as well in the crock pot. 4-5 hours on low does the trick.

    Made 2 small changes when making this. We used powdered dry ginger, and shallots instead of onion.

    I really enjoyed lentils made this way. I added one medium sweet potato and a large carrot, as well as took MEGGO27's advice and added cayenne. I served it over brown basmati rice seasoned with cumin, curry and lemon juice. YUM! Thanks. - 12/21/08

    I made these Honey Baked Lentils this morning. They're good but they're lacking in something. Next time, I'll use maple syrup instead of honey and add some curry powder to give it more of a kick. They're also a little dry so I was thinking a nice mango chutney & yogurt would complete the dish. - 3/8/20

    This was sooo good! I doubled the garlic (big garlic lovers in this house) substituted 1 tbsp of maple syrup for 1 tbsp of honey, added a pinch of red pepper flakes and added some cornstarch near the end to thicken it up. I will definitely be making this again, I will try the slow cooker next time - 1/30/12
