Pizza Stuffed Potatos

Ingredients
1 large baking potato.1 T. olive oil2 cloves minced garlic1/2 cup chopped finely onion1/2 cup chopped finely green bell pepper1/4 cup chopped raw mushroom1 cup chopped finely tomatoLemon juice from 1/2 lemon1 t. brown sugar6 large black olives sliced1 t. salt1 t. black pepper1 t. ground oregano1 T. chopped fresh basil4 oz. grated part-skim mozzarella cheese2 T. grated parmesan cheese
Directions
Makes 2 Servings...

Slice the potato in half lengthwise and bake both halves at 350 degrees for 45 minutes. Remove from oven and place both halves in a casserole dish and set aside, but leave oven on.

After potato has been in the oven 25 minutes, in a saute pan add olive oil, garlic, onions, mushrooms and bell pepper. Saute 5 minutes. Add tomatoes, lemon juice, brown sugar, oregano, basil, salt and pepper. Saute 10 minutes or until ingredients thicken together to make the 'pizza' sauce.

Taking a fork, fluff the flesh of each potato half. Place half of the sauce on/over each potato. Top each potato with half of the mozzarela, half the parmesan, and half of the black olives.

Bake in the heated oven 10 minutes, or until cheese is melted. Serve and enjoy!
