1 # Carrots - cut into medium slices1 TBSP EVOO1 TBSP grated ginger4 garlic cloves, smashed1 1/2 cups chicken broth2 TBSP plain greek yogurthandful croutonsdash soy sauce
Toss carrots in EVOO, roast in oven at 400 degrees until nice brown color on edges. Add ginger, garlic, soy sauce , chicken broth and carrots to food processor. Blend until smooth. Soup will be chilled some, either serve chilled or heat on stove until warm. to serve top with spoonful of plain greek yogurt and a couple of croutons.
