Banana Bread

1/2 c coconut oil1 c white sugar2 eggs (beaten)3-4 ripe bananas (mashed)1t vanilla1t cinnamon3 T milk2 c flour1 t baking soda1/2 t baking powder1/2 t salt1/2 t cinnamon (additional--optional)1 T sugar (additional--optional)
350 degree oven
lightly spray loaf pan (or mini loaf pans)
Optional: mix 1/2 t cinnamon with 1 T sugar--sprinkle in bottom of pan(s) and on top of batter prior to baking
sift together flour, baking soda, baking powder and salt.
mix coconut oil and sugar; add eggs (already beaten) and bananas (separately mashed). Add vanilla, cinnamon, milk, and sifted ingredients.
pour batter into pans. Bake approx 40 min for mini loaves and 1 hour for one large loaf.
Serving Size: makes 4 mini loaves cut into six pieces
