Power Greens Salad for One

Ingredients
3 c. New Star Spinach PLUS Power Greens (w/ bok choy and baby swiss chard)2 T. Balsamic Vinaigrette1/2 c. canned mandarin oranges (1/2 a small can)1/2 medium red apple, choppedFreshly squeezed lemon juice of half lemon1/8 c. golden seedless raisins, packed1/8 c. chopped walnuts
Directions
Cut medium red apple in half. Remove seeds and chop. Place in bowl. (I chopped the whole apple, and saved the other half for another meal). Roll lemon and cut in half. Squeeze half a lemon on chopped apples and thoroughly coat them in the juice.

Place prewashed greens in a salad bowl. Add oranges, apples, raisins and walnuts. Pour two tablespoons balsamic vinaigrette on salad and toss to coat thoroughly. Eat immediately or refrigerate for later.

Serving Size: makes 1 large salad
