Spicy Pepper Penne with Beans

1 cup canned white beans, drained and rinsed1 cup canned red kidney beans, drained and rinsed2 oz. (56 grams) penne rigati pasta1/8 cup sweet red bell pepper, diced1/8 cup sweet yellow bell pepper, diced1/8 cup sweet orange bell pepper, diced1 T. chili powder1/4 tsp. crushed red pepper flakes1 cup canned whole tomatoes with juice2 stalks green onion, chopped1/8 cup shredded swiss cheese
Heat water for pasta to boil in small to medium saucepan. Add penne and cook for recommended time (usually 11-13 minutes). Meanwhile, pour 1 teaspoon olive oil in sauté pan. Add diced peppers and sauté a couple minutes. Add chili powder and crushed red pepper flakes. Add red and white beans and whole tomatoes. Break up tomatoes a bit with spatula and allow mixture to reduce. When pasta is to desired texture, drain and add to sauté pan. Cook an additional 1-2 minutes. Serve on plate and top with shredded swiss and chopped green onion. Add more seasoning if desired.
