Greek Green Beans, Squash & Potatoes

-2lbs green beans-2 cans tomato sauce-4 large zucchini squash 0.5in slices-2 large potatoes medium dice-2 tbsp extra virgin olive oil-1 large onion medium dice-2 cups water (may add more or less, enough to cook)
-Chop onions to medium dice and cook over medium heat until translucent
-Add tomato sauce, water, green beans, squash & salt/pepper to taste
-Cover simmer over medium low heat (reduce heat if needed) until potatoes and green beans are soft. Stir every 10-15 minutes
-If necessary, remove cover and simmer to reduce and thicken sauce.
Serving Size: Makes 5 Equal Servings
