Ingredients
3 eggs3/4 c flour1/4 tsp salt1/2 tsp pepper1/2 tsp herbs de province4 tbsp chopped parsley leaves1 cup milk3/4 c grated parmesan
Directions
in a blender, mix all ingredients on medium speed. spray muffin pan with non-stick spray and fill them 3/4 the way. bake at 400 degrees 20 -25 minutes.

    Next time I plan to add some Garlic or Garlic salt to give a little more flavor. These are very good though. I made them in a mini muffin tin so like 3 are a serving. - 2/29/08

    These are really good. I also made them with cinnamon and sugar instead of the cheese and herbs. Those are really good too. Just make sure to use the blender or they will be too heavy. - 2/21/08
