Curried Rice With Shrimp

1/2 Tbsp olive oil1/2 cup diced large1 carrot, chopped1 Tbsp minced garlic1 tsp curry powder1/2 cup brown rice1 1/4 cup water1/4 tsp salt 1/4 tsp black pepper1 lb peeled and deveined large shrimp1 tsp dried basil
Heat the oil in a large skillet over medium heat. Add the onion and carrot and cook, stirring occasionally, until soft, 6 to 8 minutes. Add the garlic and curry powder and cook, stirring, until fragrant, 2 minutes.
Add the rice, water, and dash of salt and pepper and bring to a boil. Reduce heat and simmer, covered, for 15 minutes.
Season the shrimp with salt and pepper. Nestle them in the partially cooked rice. Cover and cook until the shrimp are opaque throughout, 4 to 5 minutes. Fold in the basil.
