Barbecue Chicken Grilled Cheese

Ingredients
2 slices light wheat bread3 oz chicken breast, grilled and thinly sliced1 tbsp barbecue sauce1 slice reduced fat cheddar cheese1 tsp light Caesar or Ranch salad dressing
Directions
Toss the grilled chicken with 1/2 tbsp of barbecue sauce and warm in microwave for 30 seconds.
Spread 1 slice of bread with barbecue sauce and the other with Caesar or ranch salad dressing.
Layer sandwich with chicken and cheese and grill in nonstick pan coated with cooking spray until cheese melts and bread is golden brown.

    I grilled up the chicken on my George Foreman too, but I used chicken tender meat. I just cut in half and had chunks of chicken instead of slices. Really yummy and so easy. I will definitely be making this again. - 10/2/09

    I made it with smoke turkey breast b/c that is what I had. I also didn't do the salad dressing on one slice b/c I didn't have it, but it was still really yummy. I'd consider it comfort food for sure! - 2/11/09

    the 55.3mg of cholesterol comes from the chicken, duh. chicken has 24mg of cholesterol per ounce. this was a really good and easy recipe. definitely filling and low in fat - 1/28/09
