Salmon Cake

Ingredients
1 can of Salmon, drained & shredded2 eggs1/2c chopped green peppers1/2c chopped red peppers2-3 green onions, finely chopped1/2c shredded low-fat cheddar cheeseCooking spray
Directions
Mix together all ingredients except cooking spray. Spray muffin tin with cooking spray and place mix in each cup. Bake at 325 for 20-25 minutes, until the mixture is set. The muffins are good either hot or cold.
