BKs Simple Miso Soup

Kombu Broth:1 6 inch piece of Kombu8 C waterMiso Soup - 8 C kombu broth1 T soy sauce1 t sriracha saucedash of white pepper3 heaping T miso (I like white miso for this)1 C thinly sliced mushrooms1 C fresh spinach, shredded3 green onions, sliced(dash of toasted sesame oil - not included in nutritional data)(cubed tofu)
To prepare kombu broth:
Bring 8 cups of water to a boil. Add the six inch strip of kombu, simmer for twenty minutes.
To prepare the soup:
Heat the kombu broth gently.
Whisk in miso, soy sauce, white pepper and sriracha.
Add in the sliced mushrooms, spinach and tofu if using.
Serve when heated through, topping with green onions (and a bit of toasted sesame oil if desired)
Serving Size: Makes 4 generous 2 cup servings
