1 tablespoon olive oil1 cup steel cut oats 3 cups boiling water 1/2 cup nonfat milk1/4 cup nonfat milk1/4 cup kefir1 tablespoon brown sugar 1/4 teaspoon cinnamon
In a large saucepot over medium-low heat, add the olive oil and the oats. Stir for 2 minutes to toast. Add the boiling water and reduce heat to a simmer. Keep at a low simmer for 25 minutes, without stirring.

My family and I have only recently tried the steel cut oats and this is a similar recipe to Alton Browns, that we were using. I have found that the oats toast up nicely without any oil and I add in a pinch of salt with the milk. Thanks for sharing this recipe here. My family loves this. - 9/1/10
