yogurt flax bran muffins

Ingredients: 1 cup Fiber One Cereal1 Egg1/4 cup Canola Oil2 - 8 oz cartons light flavored yougurt (any flavor desired)1 1/2 cup flour2 Tbls. brown sugar1 1/4 teaspoons baking soda1/2 teaspoon salt1 teaspoon cinnamon1 1/2 cup mixed fruit (Blueberries, Strawberries, raspberries, cranberries, crushed pinapple, chopped apple. etc.)1/2 cup Post Bran Flakes Cereal1/4 cup flax seed ground1/2 cup Walnuts chopped
1. Heat oven to 400°F. Place paper baking cup in each of 24 regular-size muffin cups, or grease bottom of each muffin cup with oil spray. Place cereal in resealable food-storage plastic bag; seal bag and crush with rolling pin or meat mallet (or crush in food processor).
2. In medium bowl, stir together egg, oil and yogurt. Add cereal, flour, brown sugar, baking soda, cinnamon, flax and salt; stir just until dry ingredients are moistened. Gently stir in berries and/or fruit and walnuts. Divide batter evenly among muffin cups, filling each 3/4 full.
3. Bake 18 to 20 minutes or until golden brown. Immediately remove from pan.
