Warm Cauliflower Quinoa Chickpea Salad

3 cups chopped cauliflower1 cup uncooked quinoa2 cups cooked chickpeas rinsed & dried1 lemon juiced1 clove garlic2 Tbsp olive oilparsleysea salt
Toss cauliflower with 1 Tbsp olive oil, juice of one lemon & chopped garlic. Bake at 350 for 15-20 minutes. Toss chickpeas with 1 Tbsp olive oil & salt lightly. Bake at 350 for 15-20 min. Cook quinoa in 2 cups water salted lightly for 15-20 min. Toss all ingredients in large bowl. Add parsley & sea salt to taste. Serve warm.
