1 cup vegan butter substitute*2 3/4 cups flour (a combination of ww pastry and unbleached white)1/2 cup truvia 1 1/2 tsp ener-g egg replacer + 2 tbsp warm water1 tsp vanilla extract1/2 tsp almond extract1 tsp baking powder1/4 tsp salt or nusalt2 tbsp unsweetened almond milk (or other vegan milk sub)
In a large bowl combine margarine, sugar sub, egg replacer (prepared beforehand), vanilla and almond extracts. Add flour, salt, baking powder and milk and mix until blended. Roll into a ball, wrap in plastic wrap and chill for at least 1 hour.
Roll out and cut with your cookie cutters. Bake 6-7min in a 400F oven, 1 inch apart.
**if you want to decorate with sprinkles, etc, remember to put them on before baking!
