Leftover ham bone with a generous amount of meat left on it6 1/2 cup Dry Pinto Beans 1 large Onion, choppedCelery, 5 stalks, chopped fine3 oz red wine, optional3 oz white wine, optional2 tsp. Garlic powder2 tsp. Onion powder1 1/2 Garlic Salt1 1/2 Onion Salt6 Bay Leaves1 1/2 tsp. Old Bay Seasoning1 tsp. Parsley, dried1/2 tsp. Tony Cachere's Creole Seasoning 1 tsp. Veron's Seasoning or substitute more Tony's3 tbsp. Dried or Fresh Chopped Chives, optional
Place ham bone in 5 qt crock-pot, add beans, wine, and veggies. Fill with water up to 1 inch from top. Heat on high until hot, then add spices and switch to low. Add water as needed, do not let it get dry. Cook on low overnight, the longer the better! It is not possible to overcook! When ready to eat, scoop out bay leaves and bones. Skim any fat off the top. Smash some of the beans to make this a thick and hearty dish! Add some extra ham if desired. Experiment with the spices to make it your own! Enjoy!
